Easy Cauliflower Salad (faux potato salad)

One of the foods that I have always enjoyed, and like to make , has been potato salad . However, since I have been cutting down the carbs in my diet, I have not made it very often.
I read about making “fake potato salad” by using cooked cauliflower, and so yesterday, I tried doing that, and it turned out to be delicious !
Basically, you just use whatever recipe that you would normally use for making either potato salad or macaroni salad, but use cooked cauliflower instead. I cut the cauliflower into small florets ad steamed it until tender, which made some of the smaller ones softer, and the larger stems were a little chewier, so it adds a good entire to the salad.
I added eggs, shredded cheese, and bacon bits for extra protein, as well as olives, green onions and frozen peas for color and vegetables.
I made a whole large bowlful, so we will have the cauliflower salad to go along with meals for a while. Here is how mine turned out.96568069-DA2C-47CA-95AB-86DC95CAC486.jpeg
