Here's my Cauliflower Fried Rice recipe which I eat most of the time since I started my OMAD Diet. Please share your recipes to the community too. ;)

CAULIFLOWER FRIED RICE RECIPE:

Ingredients
3 tbsp olive oil
4 cloves garlic (minced)
5 cups cauliflower rice (grinded using food processor)
5 beaten eggs
1/2 canned tuna
2 tablespoons unsweetened almond milk
1 tablespoon coconut aminos
1 onion (chopped)
spring onions
salt

Instructions:
1. Heat olive oil over medium high heat in large wok.
2. Add garlic and onion and cook until garlic begins to brown.
3. Stir cauliflower and tuna into oil and garlic then push to the side.
4. Combine eggs and almond milk, then pour into the pan and cook scrambled.
5. Stir scrambled eggs into the cauliflower rice with tuna.
6. Add salt and stir over medium heat for a three minutes.
7. Garnish with spring onions.

Note: You can replace tuna with chicken or any other meat.
